We're trying to push back on winter with delicate citrus acidity and and caramel sweetness springing right out out of this coffee from Luiz Paulo Dias Pereira and his farm Fazenda IP in Minas Gerais, Brazil. It's a fully washed Yellow Catuai variety and it was imported by Collaborative Coffee Source.
From CCS: "IP’s story is all about family and generations. In 1967 Isidro Pereira, father of Luiz Paulo, purchased the farm. During this period, Luiz Paulo was studying agricultural techniques and livestock production and five years later, joined his father in running the farm.
In 1974, through Luiz Paulo’s initiative, an expansion plan took place on Fazenda IP.
More and more coffee seedlings were planted while at the same time, area of land grew over 500% of IP’s original area. Decades later, Luiz Paulo bought his first de-pulping machine and started studying up on the latest methods of coffee processing and production of specialty coffees.
Over time, Luiz Paulo developed a bonus-paying policy to motivate all personnel involved in post-harvest tasks. When a lot resulted in cups scoring over 80 points, the bonus was enacted. At the same time, Luiz Paulo offered the staff guidance and training on the importance of quality processes in coffee growing.
According to Luiz Paulo the, “Search for innovation in [the] specialty coffee business must be constant and mandatory. Nowadays, no one can run a coffee farm in a sustainable way with coffees rating below 80 points in a cupping session”."
