For five generations the Thipaiah family have been producing coffee on the biodiverse land of the Kerehaklu estate in Chikamagular, India. The father-son duo Ajoy and Pranoy Thipaiah have been continuing the legacy of their ancestors by enriching the coffee culture within India. 

Pranoy is dedicated to expanding his practices by experimenting with the microbes in the soil from the other agriculture on the estate to enhance the uniqueness of the coffee. Experimenting in this way allows for the coffee to establish a complex flavor profile. 

A typical Kerehaklu lot Is processed as follows: Freshly harvested cherry is floated the same day it's picked, then placed in open-air fermentation tanks from approximately 6:00pm to 9:am the following morning. After this overnight fermentation in cherry, the coffee is pulped and transferred into lidded plastic barrels containing fresh water and a measured amount of the previously mentioned starter culture. The coffee is stirred every few hours  to introduce oxygen and ensure a uniform fermentation. After 35–37 hours , it is mechanically washed and then moved to drying. Drying begins under heavy shade for the first two days , after which the coffee is transferred to a polyhouse for continued drying.

The Kerehaklu Estate is much more than just coffee! Ajoy and Pranoy grow and harvest various fruits from their land, such as avocado, peppercorns, and other native flora from India. The family invite people to stay on the estate in one of their cabins for an immersive experience of the land.

We have found that this coffee has sweet notes of Milk Chocolate, Tropical Fruit, and is highlighted with acidic notes of Lemon.
