This coffee is absolutely insane! While trying it for the first time on the cupping table we knew we had to get our hands on some. We then found out it finished in 4th place in the Colombia National Coffee Innovation Competition. Producer Faber Pacheco combines Maragogype and Pacamara varietals together and subjects them to a thermal shock process where the temperature is raised during fermentation in cherry and they are then transferred to cool water. Not unlike strategies deployed in alcoholic fermentation, it increases sugar content but also presents a lovely level of tartness. We taste Strawberry Bon Bon, Lemon Zest, and Fuji Apple!
The culture of coffee runs in Faber's blood. He has worked on his family's farm since he was young. He and his father have carried the family tradition for the last 15 years by growing exotic varietals and mastering innovative processing methods.
He is always striving to make his farm more self-sustainable and is developing a reforestation program to improve biodiversity and attract bird watchers. Faber's innovation and discipline drive his high quality production as he leads a new and exciting generation of coffee farmers!
